Mendoza attended Hillsborough Community College where she studied undergraduate mathematical coursework from 1997 to 2000. Next, she joined Florida State University and graduated with a Bachelor Of Science degree in Geosciences, Geography, Meteorology, Math, and Physics which she received in 2005 after completing her studies. Additionally, she furthered her education at Mississippi State University. In 2010, she finished her studies and attained a Master Of Science degree in Broadcast Meteorology.

During her time in Alabama, she has forecasted many acute weather events counting the 2011 tornado outbreak and multiple other huge storms in central Alabama. She serves on the board of multiple nonprofit organizations, including the Black Warrior Riverkeeper and Alabama Goodwill Industries.
